Aimee Nott Moore (1918-2009) of Conway, South Carolina, served as a dietitian in the United States Army from February 1943 until 1945. Aimee Nott Moore was born in 1918 and grew up in Conway, South Carolina. She attended the Woman's College of the University of North Carolina (now the University of North Carolina at Greensboro) and graduated in 1939. She spent one year doing an internship at the University of Michigan in Ann Arbor, and then worked for another year as a dietitian in Mississippi.

By December 1941, she was working at a hospital in Virginia. Moore become one of the first dietitians commissioned in the army in February 1943. She immediately went to work as the head dietitian at the army hospital in Blackstone, Virginia. In August 1943, she was sent overseas to Bizerte, Tunisia, via Casablanca, Morocco. In early 1944, she went to Mattaloni, Italy, for the storming of Monte Cassino, and stayed there for six months. Then, for the next year, she was stationed in Cannes, France with the 78th Station Hospital. Next, she spent a short time caring for recently released prisoners of war in Aix-en-Provence, France, before returning home in September 1945.

Moore later received a master's degree from Columbia University and a doctorate from Michigan State University on the GI Bill. She then trained dietitians at Cornell University and at the University of Missouri at Columbia, where she served as head of the dietetics program beginning in 1961. Moore died 7 October, 2009.)
